things i saw, things i love

This post is coming a few days late, due to my weekend in Charlotte, but alas I didn’t forget about it! I’m sitting here in the CLT airport, hoping my flight isn’t delayed due to the snow up north (where I am heading), passing the time here on my good old MacBook. Gosh, MacBook, do I love you.

Anyways, there’s been some great inspiration out there in the blogging world this past week– so many beautiful things! Here are some in particular that caught my eye…

Adorable DIY push pins from mintdesignblog. How cute are these?! 

I love the look of this chocolate cake via flagrante delicia… her blog is in Spanish, which I unfortunately can’t read, but her photography is wonderful. I am just going to have to put the recipe for this chocolate cake into an online translator it looks SO good.

This hat (and coat!) would be so cute for spring. Seen at Beklina.

I’m obsessed with this bedroom. Seen and loved on my beloved Pinterest! I simply cannot get enough of this website… fills my heart with happiness each time I log in!

This Kate Spade party dress has got to be one of the cutest summer dresses I have ever seen. So happy in yellow! I have spotted this on many blogs lately, as it’s clearly a winner!

This handmade packaging seen on delicious days, is so fun and original. How fun to bring to a summer party or to give as a handmade gift. LOVE!

Happy Friday!

I’m officially on February vacation at 3:00 and this makes me ever so pleased.

I’m heading down to Charlotte after work to visit Bails! And Kevin! AND OLIVE!

Meet Olive:

We haven’t officially met yet, but I have a feeling we’re going to be friends.

I’m so excited.

To see my dear friend, and her husband, and their new beautiful house, and their dog.

Mostly, I’m excited for that.

But also, because it’s going to be 70 degrees! 70! The most perfect temperature of all time! Eeee!

v-day dinner.

I hope your Valentine’s day was as delicious as mine! This recipe was perfect for a special V-day dinner, but it would be an excellent choice for any night of the week!!

I got this recipe straight out of Barefoot Contessa’s Back to Basics. YUM.

Ina Garten’s Herb Marinated Pork Tenderloin:

Ingredients
1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
kosher salt
3 pork tenderloins (about 1 pound each)
freshly ground black pepper

Directions:

Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight (I did mine overnight and the flavor was unreal).

You can find the rest of Ina’s version here. I went a different route and simply baked the pork for 350 degrees for 40 minutes. It was super tender and lemon-y.  Highly recommended.

We made homemade risotto as a side dish, which was insane, and topped it off with a strawberry poppyseed salad.

Oh, Veda, I hear ya. I like ice cream too.

It also tastes good when days are cold.

Believe me, I know these things.

It’s creamy and sweet and tastes delicious on my taste buds.

I have a few different “favorites” in the ice cream department, but right now this is my top pick. The best part is the graham cracker pieces!
